SIDE BY SIDE  ·  CUTTING BOARD XL

Maple and oak, 50 cm, Form 2003 — Andreas Ulbricht on the largest surface in the series.

Maple and oak, untreated, 50 cm long, 31 cm wide, 6 cm high, 3.4 kg — designed by Andreas Ulbricht, awarded the Form 2003, handcrafted at the Wendelstein Werkstätten and the Caritas Werkstatt München. The XL surface is not simply more of the same: it opens a different quality of work — space for parallel operations, for large cuts, for the moment when the board is not a bottleneck but a foundation.

For whom is the Cutting Board XL — when does 50 × 31 cm make sense?

For people who cook seriously. Anyone who regularly works with larger cuts, keeps multiple ingredients ready at once, or simply does not want the board to become the bottleneck in the workflow. 50 × 31 cm is the largest surface in the side by side cutting board series — designed to be the board one buys once and does not replace.

What role does the combination of maple and oak play?

Maple is pale, fine-grained and hard — the classic cutting wood that is easy on knife edges and absorbs minimal moisture. Oak is darker, with a coarser grain and its own distinct character. Both untreated, both suitable for food contact. The combination produces a visible contrast — not as decoration, but as the expression of two different material properties working alongside each other.

How does the foot rail construction work on the XL?

The foot rails raise the board 6 cm above the work surface — enough to slide a plate or bowl directly underneath and transfer ingredients in a single sweep. Rubber grips in the rails prevent slipping. With 3.4 kg of solid wood, the board’s own weight adds further stability: it does not shift while cutting.

Why do two workshops produce the Cutting Board XL together?

The Cutting Board XL is produced by the Wendelstein Werkstätten and the Caritas Werkstatt München — two non-profit workshops for people with disabilities. The side by side model connects design authors like Andreas Ulbricht with craftspeople working under social criteria. The result is not mass production: it is an object with a traceable origin and handcraft quality.

What did the Cutting Board XL earn the Form 2003 for?

The Form design prize recognises objects in which form and function are not two separate layers but one. Andreas Ulbricht’s cutting board has remained in production for over two decades because it contains nothing superfluous: the foot rails, the choice of timber, the proportions — everything follows the work the board is made for.

How does one care for an untreated solid wood cutting board long-term?

No dishwasher, no prolonged soaking. Wash with warm water after use and dry immediately. Regular treatment with a food-safe clear wood oil or beeswax keeps the timber supple and resistant. A board made from 3.4 kg of solid wood, properly maintained, lasts a lifetime and improves with every year of use.
